The fulla de salze olive variety matures very early and needs to be picked much sooner than other local varieties, which are usually not picked until November at the earliest. Depending on weather and other agricultural conditions, we start picking as early as the end of September. This year, we harvested the olives in early October and the oil is more delicious than ever.
